Before I get into the Rosemary Paloma, let’s give the traditional Paloma its proper respect. Contrary to popular belief, the Paloma is Mexico’s most popular tequila-based cocktail. Not the margarita. And I love it because it calls for just 2 ingredients: tequila and grapefruit soda. That’s it. That’s the recipe. I’ve had a traditional Paloma hundreds of times. But I was curious what it would taste like if I remixed it a little and added some fresh ingredients.

So I did some experimenting in the kitchen and came up with a Rosemary Paloma. I knew I wanted to use fresh squeezed grapefruit juice. But because grapefruits are more on the tart side, I knew I would need a sweetener. But not just any sweetener would do. Enter rosemary simple syrup.

I’ve been obsessed with fresh rosemary lately. It’s a great herb for seasoning poultry. And more, it makes for a beautiful cocktail garnish. And I absolutely love the smell.
